CELEBRITY chefs are helping to boost sales of haddock, and in turn, assist the fishermen of the North-east coast of Scotland, with the launch of a new book featuring recipes from famous names such as Gordon Ramsay, Antony Worrall Thompson, Rick Stein and Ken Hom.
The book is the brainchild of the Provost of Aberdeenshire, Councillor
Raymond Bisset OBE, who is also the chairman of the North East of Scotland Fisheries Development Partnership.
Councillor Bisset wanted to raise the profile of haddock and to promote it as a prime fish in the culinary market, where it is still very much undervalued. He said: "We want to encourage people to be more adventurous, as haddock is often not seen as a fish with potential, yet is an excellent alternative to other types of white fish and is harvested in a sustainable manner - in fact the current haddock stock is the largest for 35 years.
All of the chefs we contacted gave great messages of support to the fishing industry and were very positive about the book and the way in which we are using it to raise awareness.
Gordon Ramsay says he was brought up on fish in Glasgow during his childhood and he ensures that his four children also eat as much of it as possible. Chefs contributing recipes to the book including top Scottish chefs and local talent Gary Isaac of the Banchory Lodge Hotel, who is Grampian Seafood Chef of the year 2005. Other celebrity chefs whose recipes are featured include Josceline Dimbleby, James Martin, Mary Berry, Gary Rhodes, Lady Claire MacDonald and Manju Mahli. The book, which is free of charge, is available by calling Lisa Stephen at Aberdeenshire Council on 01224 664727 while stocks last. The special collection of recipes has been compiled for the North East of Scotland Fisheries Development Partnership in association with Aberdeenshire Council, Aberdeen City Council and Scottish Enterprise Grampian.
