AN organic salmon farm off the coast of Mayo has been inundated with enquiries after being recommended on the BBC’s ‘Full on Food’ programme.
Clare Island Organic Salmon say they’ve had calls from throughout the UK and Ireland after celebrity chef Richard Corrigan described their salmon as “great”.
‘Full on Food’ is watched by more than three million viewers.
Presenter Corrigan, who visited the farm off the coast of County Mayo earlier this year, said he was surprised at the quality of the organic fish. He also said that it was clear that standards on the farm were very much up to the mark.
He added that he planned to put Clare Island Organic Salmon on the menu in his London restaurant Lindsay House, which has a Michelin star.
Eve-Anne McCarron, business development manager with Marine Harvest Ireland who own the farm, said they’d been having a very busy time because of the programme.
“Richard is one of London’s top-rated chefs and he’s known for being outspoken and especially fussy about his fish. So for him to give Clare Island Organic such an endorsement is brilliant for us.”
