Supermarket group comes to aid of iconic fish restaurant

THE up-market supermarket group Waitrose and one of Britain's largest buyers of fish, has come to the aid of one of Yorkshire's best known fish restaurants.

Nash's in Leeds was once a major favourite of stars filming at the Yorkshire TV studios or appearing at the nearby Grand Theatre in the city, but recently it has been affected by the recession.

Now Nash's has re-opened its doors with the help of Waitrose and is one of the few fish and chip restaurants to serve a fully sustainable fresh fish menu.

Waitrose says it will share the expertise and stocks of its fresh fish supplier to enable the restaurant to serve fish that is fully traceable from catch to customer. The company which launched its sustainable fishing policy 12 years ago, has been looking at the plight of the world’s fish stocks and attracted celebrity backing from the likes of Elle Macpherson and Stephen Fry.

Quentin Clark, Waitrose Senior Fish Buyer, said: "When eating out, we understand how hard it is to be confident the fish you’ve been served has come from a sustainable supply. By giving Nash’s access to our dedicated fish supplier, customers eating in the restaurant or grabbing a takeaway can feel reassured that their meal has been responsibly sourced."

Leeds' first ever Michelin-starred chef and consultant at Nash's, Jeff Baker said: "A huge effort has gone into sourcing the highest quality ingredients for Nash’s. However, it is a challenge for small restaurants to source and guarantee fully sustainable fish."
