THE Grimsby Institute of Further & Higher Education’s UK Seafood Championship final is ready to get underway.
The highly acclaimed competition, organised by the Grimsby Institute and sponsored by Young’s Seafood, The Seafish Industry Authority, Grimsby Fish Merchants Association, The Fishmongers Company, Russums and Oak Ridge Hotels was open to full time catering or college based modern apprenticeship students throughout the UK.
Huddersfield Technical, Kendal, Blackpool & The Fylde, Bradford, Birmingham, Guernsey, Pendleton 6th Form and Westminster Kingsway colleges proved to be the elite as they fought off stiff competition in the regional heats to earn their place in Mondays final.
The finalists must prepare three fish dishes for six covers, to include a starter, soup and main course, all of which must be produced using fish from sustainable sources as outlined in the competition guidelines.
Mitchell Tonks, co-founder of Fishworks and Tatler magazine’s restaurateur of the year 2006, will lead the judging panel and will be joined by Ben Bartlett, Master Craftsman for the Craft Guild of Chefs, Grimsby MP Austin Mitchell, Gerry Mahood of Youngs Seafood Ltd, Steve Norton, Chief Executive of Grimsby Fish Merchants, and Richard Wardell of the Seafish Institute Authority.
Sue Hurrell, UK Seafood Competition co-ordinator said: “This national competition allows student chefs to show flair, understanding, skill and ability, whilst giving them a flavour of the industry in the presence of respected judges already on the circuit.”
